Behind the Beans
This specific lot consists of 100 percent Yellow Catuai. The cherries were hand-picked and moved to the patio for a slow natural drying process lasting 16 days. Following the drying phase, the coffee underwent a 20 day resting period in storage bins to allow the moisture levels to stabilize before being hulled and delivered to the Cocatrel warehouse.
In the cup, this Yellow Catuai offers a sophisticated expression of the Campo das Vertentes terroir. It has a clean and balanced profile characterized by a deep honey-like sweetness and a creamy mouthfeel. The extended drying and resting periods enhance notes of toasted almond and yellow stone fruits, finished with a refined acidity that reflects Aurelio's meticulous processing standards.
