Wild Meadowsweet & Rose Shrub

To celebrate our local Meadowsweet and Roses, we picked both in season and put them into white wine vinegar. They were left to steep for months gradually releasing their scent and flavour so that the vinegar becomes little more than an extractive ingredient. Eventually, we strain the flowers and add raw cane sugar to soften the flavour. What you're left with is the most amazing shrub, simply add half a teaspoon to a glass of Wild Eve to really boost the florals. Alternatively add it to soda for a refreshing spritz.
